If you use the right sauce, this recipe is vegetarian and vegan. I also included a couple quick suggestions for easy sides to keep your meal stress-free. Hope this video is helpful for you!

Tofu/tempeh, butternut squash and dates tagine

I have adapted a recipe from Sainsbury's online magazine replacing the lamb with pieces of marinated and baked tofu and tempeh.

Ingredients:

1 large onion, sliced into thin half moons

3 garlic cloves, minced

1 Tbsp ras el hanout (or tagine) spice mix

3 cups cubed butternut squash and/or cubed sweet potato

100 g pitted dates, halved

1 cinnamon stick

1 x 400g tin chopped tomatoes

500 ml hot vegetable stock

1 x 400g tin or carton chickpeas, drained

3 cups cubed marinated baked tofu/tempeh

Some chopped coriander to serve

Cashew sour cream to serve (optional)

Tofu/tempeh marinade:

2-3 Tbsp soy sauce

1 Tbsp apple cider vinegar

1 tsp onion powder

1/2 tsp garlic powder

1/2 tsp smoked paprika powder

(Mix marinade ingredients in a glass box or bowl add diced tofu/tempeh, coat the pieces and leave to marinate in the fridge overnight.)

Method:

Dry saute the onions for 5-7 minutes adding some stock a table spoon at a time if needed until slightly browned. Then add garlic, fry for another minute, then add the spices and fry for another minute until fragrant.

Add the rest of the ingredients except the tofu/tempeh and if using a normal pot, get to the boil, then reduce the heat and simmer for 30 minutes. If using a pressure cooker pot like I did, get the pot to pressure and then cook for 10 minutes under pressure. At the end, stir in the tofu/tempeh pieces, coriander and serve. Add some sour cream to each individual plate if using. Enjoy!

Lots of vegan love,

Inga

Maple Tempeh with Lime Couscous Salad & Minty Plums

The flavors in this dish may seem adventurous to some, with sweet maple, fresh lime, and bright mint, but we can assure you that they come together for a delicious finish. The tempeh gets a sweet and savory marinade before crisping up in a skillet. Be sure to keep an eye on the tempeh, the sugars could caramelize quickly- they’re ready when there’s a golden brown coating on each piece. The lime couscous is seriously flavorful, and if you love lime, add a little of the zest to the salad- we won’t tell.

No Oil Crispy Tempeh | HowTo Series

Cut tempeh into cubes and put it aside.

Put the marinade ingredients into a bowl and mix together. For the marinade I used rice syrup, lemon, liquid aminos and dried ginger (although fresh ginger would have been nicer).

Put the tempeh in the marinade and mix. Put it in the fridge. If you don't have a lot of time 30 minutes would be okay. However, more than 3 hours would be better.

Preheat the oven at 180 degrees celsius. Put the marinated tempeh on a tray and grill for 20 minutes.

Ingredients:

1 package of tempeh

1/2 cup soy sauce

1/2 cup water

1/3 cup maple syrup

1/4 cup liquid smoke

1 TBS smoked paprika

1 tsp garlic powder

Cut the tempeh into thin strips, and steam for 15-20 mins. Steaming takes away the bitter taste of the tempeh.

While the tempeh is steaming, mix together the rest of the ingredients in a pyrex container or Tupperware dish. Once the tempeh is finished steaming, place the strips in the marinade and marinate for 30 mins.

Cook over medium heat for 3-4 minutes adding in some of the marinade to the pan. Once most of the marinade has cooked off, flip the strips over to cook on the other side and repeat the process again until all the tempeh is cooked and the marinade is gone.

Vegan BLT (Tempeh-bacon “Tempeh-con”) w/ No-Oil Baked Fries

Vegan, plant-based, healthy BLT? NO WAY!! Want the smokey taste of a good BLT without the added fats of bacon? Want a side of fries without being weighed down by all the oil?

Pinterest-inspired Tempeh-bacon!

For the marinade:

1 tablespoon olive oil (you can reduce this oil, but I like the sizzling effect!)

1 tablespoon agave

1 teaspoon soy sauce

1 teaspoon liquid smoke (find it here: http://amzn.to/1WS3WPL

or use smoked paprika if you don’t use liquid smoke (find it here: http://amzn.to/1WS5ids)

½ teaspoon cumin

½ teaspoon black pepper

salt

Marinate the tempeh in the pan for a few minutes before heating up the non-stick pan. This way it saves on dishes, and also you don’t need to use as much oil.

Baked fries

Use sweet potatoes and/or red potatoes

Add pepper, salt, thyme, rosemary. Add whatever seasonings you like! I skipped out on oil here since I am already using oil on my tempeh-bacon.

Sesame Honey Glazed Tempeh

I don't eat meat anymore, but sometimes I want to sink my teeth into something that has a similar texture. A Portobello mushroom does the trick, and so does fish on the rare occasion that I decide to eat it.

But tempeh works nicely too! And it's even better when it's marinated in some yummy sauce and then pan fried to perfection - mmm, mmm, good!

Here is a recipe for Sesame Honey Glazed Tempeh. I got the recipe from Cooking Light magazine's July issue, and it's delightful! Use it to make tempeh fahitas, or enjoy it whole as a tempeh steak!

Here is what you will need:

8 oz organic tempeh

3 tbsp chopped green onions

3 tbsp vegetable stock

2 tbsp soy or tamari sauce

2 tbsp honey

2 tbsp dark sesame oil

1 tbsp sesame seeds

3/4 tsp red pepper flakes

3 grated garlic cloves

1 tbsp extra virgin olive oil (EVOO) for frying

1. Combine all the ingredients except for the extra virgin olive oil in a bowl. Stir to combine.

2. Place 8 oz of tempeh in a baking dish with a lid. Pour the marinade over the tempeh, tossing it around to make sure it all gets coated. Let the tempeh marinate in the fridge overnight, or for at least 8 hours.

3. When ready, place a skillet over high heat. Heat up 1 tbsp EVOO.

4. Meanwhile, if you're making fahitas, chop up the tempeh into chunks. If you're not, you can leave the tempeh whole.

5. Add the tempeh to the pan, leaving the marinade in the bowl. Searing the tempeh until brown on all sides. Once seared and browned, turn off the heat and add in the leftover marinade, tossing it so as to coat the tempeh.

6. Remove from the heat, and serve!

Marinade for Tempeh and Tofu

Here's a quick, easy delicious vegan tempeh marinade.

Let the tempeh marinate for at least an hour, but the longer the better! Overnight would be best. Try kicking your tempeh or tofu up a little with this marinade.

You can use this same marinade to make tempeh bacon. Just cut the tempeh into thinner slices, before soaking.

This marinade is also great with tofu!
