Vegan, plant-based, healthy BLT? NO WAY!! Want the smokey taste of a good BLT without the added fats of bacon? Want a side of fries without being weighed down by all the oil?
Pinterest-inspired Tempeh-bacon!
For the marinade:
1 tablespoon olive oil (you can reduce this oil, but I like the sizzling effect!)
1 tablespoon agave
1 teaspoon soy sauce
1 teaspoon liquid smoke (find it here: http://amzn.to/1WS3WPL
or use smoked paprika if you don’t use liquid smoke (find it here: http://amzn.to/1WS5ids)
½ teaspoon cumin
½ teaspoon black pepper
salt
Marinate the tempeh in the pan for a few minutes before heating up the non-stick pan. This way it saves on dishes, and also you don’t need to use as much oil.
Baked fries
Use sweet potatoes and/or red potatoes
Add pepper, salt, thyme, rosemary. Add whatever seasonings you like! I skipped out on oil here since I am already using oil on my tempeh-bacon.
I got my papercutter from Michaels, with a 50% off coupon. This is the papercutter I use for everything. You can find a similar one on amazon http://amzn.to/1OqJBhq.
3 Tbs. Braggs liquid aminos, tamari, shoyu, or soy sauce
1 ½ tsp. white wine, apple cider, rice vinegar or any vinegar you have
2 cloves garlic, minced
1 Tbs. Ketchup
1 tsp. agave or sweetener of choic
1 tsp. sesame oil
1 tsp. sriracha
Whisk together dressing ingredents and pour over tempeh. Store in a container with a tight fitting lid. Marinate for several hours or overnight, shaking container once in a while. Pre-heat oven to 375 degrees. Lightly oil or spray a baking pan. Spread marinated cubed tempeh out leaving space and bake for 25 minutes, turning halfway through bake time to not burn but lightly brown 2 sides.
Liz C: amazing friend, adventurous chef, and public health rock star taught me an important lesson -- tempeh is DELICIOUS! Come visit her tiny kitchen where she whips together a chermoula (North African marinade) tempeh dish with some sweet couscous and a delicious salad with yogurt-dill dressing on the side. Mmmm... enjoy!

I don't eat meat anymore, but sometimes I want to sink my teeth into something that has a similar texture. A Portobello mushroom does the trick, and so does fish on the rare occasion that I decide to eat it.
But tempeh works nicely too! And it's even better when it's marinated in some yummy sauce and then pan fried to perfection - mmm, mmm, good!
Here is a recipe for Sesame Honey Glazed Tempeh. I got the recipe from Cooking Light magazine's July issue, and it's delightful! Use it to make tempeh fahitas, or enjoy it whole as a tempeh steak!
Here is what you will need:
8 oz organic tempeh
3 tbsp chopped green onions
3 tbsp vegetable stock
2 tbsp soy or tamari sauce
2 tbsp honey
2 tbsp dark sesame oil
1 tbsp sesame seeds
3/4 tsp red pepper flakes
3 grated garlic cloves
1 tbsp extra virgin olive oil (EVOO) for frying
1. Combine all the ingredients except for the extra virgin olive oil in a bowl. Stir to combine.
2. Place 8 oz of tempeh in a baking dish with a lid. Pour the marinade over the tempeh, tossing it around to make sure it all gets coated. Let the tempeh marinate in the fridge overnight, or for at least 8 hours.
3. When ready, place a skillet over high heat. Heat up 1 tbsp EVOO.
4. Meanwhile, if you're making fahitas, chop up the tempeh into chunks. If you're not, you can leave the tempeh whole.
5. Add the tempeh to the pan, leaving the marinade in the bowl. Searing the tempeh until brown on all sides. Once seared and browned, turn off the heat and add in the leftover marinade, tossing it so as to coat the tempeh.

Here's a quick, easy delicious vegan tempeh marinade.
Let the tempeh marinate for at least an hour, but the longer the better! Overnight would be best. Try kicking your tempeh or tofu up a little with this marinade.
You can use this same marinade to make tempeh bacon. Just cut the tempeh into thinner slices, before soaking.
This marinade is also great with tofu!
